Y’all should know by now that I could live on cheesy casseroles and creamy soups. I just love those decadent types of comfort food so much! Not only because they’re delicious, but rich recipes filled with all the cheesy goodness (and maybe a can of cream of mushroom soup!) remind me of my childhood. When I make comforting dishes like this flavorful King Ranch Chicken Casserole, Chicken Pot Pie Bubble Up Casserole or my kids’ favorite Easy Chicken Alfredo Bake, I know dinner is gonna be gobbled up in a hurry.
However, the truth must be told about our family dinnertime dynamics, y’all! I’ve recently accepted the fact that my husband and daughter don’t like all the pasta and loaded casseroles quite as much as my son and I do. Oh sure, they like them, but just not as much as the rest of us. This doesn’t stop them from coming back for a second helping, but Evan and Emery are more the meat and potatoes types.
So, when it comes to menu planning these days, I try to keep a healthy balance of dishes that feature all the cheese and other days that focus more on meat and potatoes or rice. These simple Baked Pork Chops are one of my favorite easy, meaty mains to serve on busy weeknights. On average, this recipe will be on our menu plan at least twice a month.
These boneless pork chops are simply seasoned and then baked to juicy perfect in the oven. They’re always a big hit with the whole family.
The two meatatarians in my house approve this recipe. ππ»ππ»

How to make baked pork chops
I make this dish using eight boneless pork chops (1-inch thickness), as well as a homemade seasoning mix that includes several pantry staple spices. Measures of paprika, smoked paprika, black pepper, salt, garlic powder, onion powder, dried parsley, thyme and light brown sugar are used in my favorite, simple homemade rub for pork chops. Substitute in bone-in, thick cut pork chops if you prefer them, or if that cut is more budget-friendly in your neck of the woods. Also, your favorite store-bought seasoning for pork can be used to make this recipe even simpler, it’s the really the method that matters when making baked pork chops.
The individual chops are lightly coated with olive oil, generously seasoned and baked on a foil-covered baking sheet to tender perfection! The foil-covered baking sheet isn’t an absolute requirement, but I highly recommend it as it does make clean up a snap. I really love this recipe for it’s convenience and time-saving qualities. This sort of dinnertime streamlining is priceless on busy nights. There are so many evenings during the school year when a person (namely, ME) doesn’t want to be committed to standing by and flipping individual pork chops on a griddle for 30+ minutes!
To avoid over cooking the meat, setting a timer is a critical precaution to take for success with this recipe, and the post-baking rest time is key, y’all. It will be tempting to dig in right in when these aromatic, deliciously seasoned pork chops come out the oven, but for Pete’s sake, control yourselves people!! You’ll be happier if you do. π A ten-minute rest time before serving and slicing into the meat ensures that there will be a juicy, flavorful pork chop on your plate.
