
It’s that time of year again where I’m ready to shed a few excessive pounds of winter fluffiness! Salads, veggie dishes, light soups, and smoothies definitely have my attention for the moment. I also have a small collection of diet-friendly dessert recipes that I lean on a great deal when I’m trying to make lighter choices, but I still crave a sweet treat at some point during the day.
These are quick and easy, mostly no-bake dessert recipes I learned about during the few years I was a member of the WW weight loss community. Even though I no longer follow that program, I still enjoy many of the protein-packed, yogurt-based recipes I learned on it, like this one. Several versions of yogurt and pudding fluff are still some of my favorite no-guilt, sweet options.
They’re just so gosh darn easy and delicious!
Two-Ingredient Greek Yogurt Pistachio Fluff is one of those comfortingly sweet, yet calorie-friendly treats. It’s a scrumptious, satisfying dessert-for-one, and a lovely little green dessert that’s been making my dieting days just a bit more enjoyable this month.

How to make easy two-ingredient Greek yogurt pistachio fluff
This super simple, two-ingredient recipe doesn’t need in-depth instructions at all, but if you’re new to the concept of low-calorie WW fluff recipes, I’m happy to introduce you to each other!
The popular WW pudding fluff recipes are quick, but substantial dessert options that are most commonly made by combining a single serving of nonfat plain yogurt (typically 3/4 cup) and a small measure of sugar-free instant pudding powder. After just a bit of stirring, a personal-size, delightfully mousse-like dessert is ready to enjoy in literal minutes!
I only make this instant dessert as an individual serving when the craving strikes. That’s another great thing to love about this little recipe, the ingredients can be safely stored in pantry and fridge for a good while. So, there’s no need to whip up a big batch… just to have it sit in the fridge, you know, talking me into eating it for dinner every time I open the door!! After I make a single serving of fluff, I simply use a chip clip to close the pudding packet and store it in a cool, dry place until I’m ready to use it again. Of course, the container of yogurt must be stored in the refrigerator until the next use.
However, if you’re having company or prefer to make several portions at once, just add one tablespoon of instant pudding mix for each recommended serving of yogurt, usually 3/4 cup. Just follow that simple ratio of ingredients until you have all the pudding fluff mixture that you need.
I also highly recommend staying strictly within the small pudding mix to yogurt ratio for this recipe, and not trying to add more flavor or sweetness by adding in extra pudding powder. The instant pudding mix powders are very concentrated and sweet on their own, so just a little bit will do to make a very tasty single portion.
While a little bit of instant pudding mix makes this yogurt-based treat so good, adding too much of it into such a small measure of yogurt will ruin it.

Honestly, any flavor of pudding mix will do to make this recipe, however my current personal favorites are pistachio, cheesecake and chocolate, and I’m open to experimenting! I’ll be sharing some of my favorite ways to serve other flavors of this dessert in future posts, but today is all about this fantastic pistachio fluff! 🌈🍀
I always enjoy garnishing my little bowls of pistachio fluff with a small swirl of whipped cream, and a healthy half teaspoon of finely chopped pistachios! But, you could also use a teaspoon of colorful sprinkles, if you prefer it.

Ingredients
3/4 cup plain, non-fat Greek yogurt
1 tablespoon(s) instant pistachio pudding mix, to taste (I mostly use the sugar-free pudding mix)
whipped topping or whipped cream, for garnish (I mostly use Reddi-Whip)
1/2 – 1 teaspoon finely chopped pistachios, for garnish (plain or lightly salted)
Directions
- In a small mixing bowl, stir yogurt and pudding mix until evenly combined. Transfer to an individual dessert dish.
- Cover and chill or enjoy immediately. Garnish with a dollop of whipped cream and extra chopped pistachios, if desired.
- Enjoy!

Generally, I’m not a huge fan of instant pudding because of its artificial aftertaste, but I’m into this idea; the tangy Greek yogurt should balance it out nicely!
