
Y’all should know by now that me and my crew are big time breakfast lovers. Eggs in any form, toast, scones, jam, bacon, sausage, pancakes, waffles, breakfast tacos and sammies… you name it and we probably love it! Breakfast for dinner, you say? Yep, we love it!
A comforting breakfast menu for dinner always feels like a party at my house, it creates a palpable buzz in the atmosphere. My big kids still get giddy about pancakes for supper, and it’s a nice change of pace that always brings us all joy. Plus maple syrup = joy, doesn’t it??
Like the rest of the world, we’ve been sticker shocked by how much many of our favorite grocery store items have risen in price as of late. Specifically, the price on breakfast meats has skyrocketed. A single package of our favorite pork breakfast sausage brand is currently priced nearly two dollars higher than it was about one year ago; although it’s the same situation with every brand on the shelf!
Through the years, I’ve dabbled with making homemade breakfast sausage just for funsies, but honestly I would purchase the convenient store items more often than not. However, a few weeks ago I decided to work on this recipe and create a breakfast sausage mixture from scratch that we could really rely on. I felt motivated to nail this down so we could, of course, save a bit of money, but also because I’m always very interested in reducing our processed food consumption where I can.

This simple recipe for making Homemade Turkey Breakfast Sausage is honestly one of my very favorite recipes at the moment, and I’ve been making it weekly. This recipe has been approved by the whole gang and no one has even asked about those store brands at all.
How to make homemade turkey breakfast sausage
All that is needed for this recipe is one pound of unseasoned, fresh ground meat and spices… lots of spices! Like every other sausage mixture available to purchase, this recipe for homemade breakfast sausage is very heavily seasoned. I use a simple dried spice mixture for our breakfast sausage: salt, sugar, black pepper, dried oregano, dried parsley, dried sage, garlic powder, onion powder, smoked paprika, and red pepper flakes.
Using the same measurements provided, you can change any of the spices on this list out for another spice to suit your own tastes or dietary needs. I believe this to be a very forgiving recipe. Although, I do think the smoked paprika, red pepper flakes, sage and oregano need to be present in the ingredients for this to have true breakfast sausage appeal.
I most often use ground turkey for this recipe as it is a meat of choice for my family, but I’ve also used ground pork and chicken and we enjoyed those variations too. I typically use 85% or 93% fat meats as a little bit of fat is important in this recipe, it helps the meat mixture stick together when it needs too, and it keeps the cooked sausage from being too dry.
The flavorful homemade sausage mixture can be made ahead and refrigerated until it’s ready to use. I often cook this mixture in a skillet as crumbled sausage for use in omelettes, breakfast tacos or to crumble over our favorite biscuits and gravy. But, when pancakes or waffles are on the menu, sausage patties are the way to go!

Making breakfast sausage is incredibly easy, y’all, and this is definitely a recipe I can commit to serving on a regular basis at home. The only reason we may buy the packaged, premade sausage mixture again is if we are travelling and cooking breakfast away from my very well-stocked spice cabinet.

We don’t usually eat sausage for breakfast, but as a lunch or dinner element, this is perfect! Loving the blend of seasonings. And unlike store-bought sausage which tend too be too spicy to my liking, homemade version can be easily customized.
Sherry’s comment makes me wonder if breakfast sausage (like the one you made) is an American thing. The Brits have black pudding with breakfast — nothing like ours. Love your recipe and have saved it for when we have company. (We only make breakfast when we have guests — otherwise it’s just big bowls of cocoa for us!)
