Hi. It’s been a minute or two… I know. Where have I been?!! Well, we’ll get to that little tidbit of an explanation in just a moment, but for now I’m happy to back to posting in time to share about a delicious sweet treat for kids of. all. ages! These super simple Cake Mix Brownie Bites really should be a thing in your life, this recipe is definitely a permanent fixture in mine.

These simple, little brownie bites are quite literally one of the 11-year-old girl’s favorite lunch box treats and she will ask for them by name, weekly, until school is out again next May!! This recipe is so crazy easy that I don’t mind making her daily brownie dreams come true.
Honestly, my little girl made this recipe all by herself the last time we had these (I say little girl, but just a few more inches and we’re eye to eye these days!! π). She couldn’t believe how easy it was to whip up a batch of her fave, chocolaty brownie bites.
These mini treats are also a great choice for a quick, weeknight dessert, or an easy option for a holiday dessert spread! Chances are no one will be able to eat just one π½οΈ.
How to make cake mix brownie bites
Only three little ingredients are required for this recipe: chocolate cake mix, neutral cooking oil, and eggs! You’ll also need a well-greased, mini-muffin tin and some non-stick cooking spray.
Any chocolate cake mix of your preference will do for this recipe, but we make these brownie bites often using Betty Crocker’s Triple Chocolate Cake Mix. The mini chocolate chips in that particular boxed mix have won us all over for life, it’s a great choice for this recipe!
When in doubt, just give us all the chocolate!
I’m happy to be back to blogging after a brief family vacation and a time of healing! In short, we’ve been on the road and I’ve been in some absolutely ridiculous, self-inflicted pain, y’all.
Firstly, we travelled to Davis, Oklahoma (6.5 hour drive) at the tail end of July for a much needed, four day family getaway. We stayed at a cute, little cabin on creek with private swimming hole and it was so cool. We also explored Turner Falls State Park and swam near some amazing tall waterfalls within the park. We travelled back to Texas and had just one night at home before traveling directly to the Texas coast for a family birthday party. We drove many, many miles in a very short period of time, and made some pretty awesome memories during that week.
But, burning up all those miles in this hot summer sun was utterly… well, exhausting!
After a whirlwind week away, we came home to all the crazy stress associated with bouncing back (or not bouncing back, is more like it!!) from travelling combined with a time crunch for getting the kids ready for school just few days later. Oh, and I have yet to mention that I came home from the beach trip with a broken pinky toe on my right foot (a.k.a. the gas pedal foot y’all)!! At the coast, we stayed at an AirBNB house that came complete with insanely heavy wooden barstools at the kitchen island. I think you’re imagination can take it from here, but a bunch of excited people running around in an unfamiliar space with bare feet, myself included, just seems like an awful idea from now on!
As if a silly, little broken toe wasn’t enough torture, my limping and walking around in such a wonky fashion for several days led to muscle spasms in my knee area later in the next week. It was just unbelievable, annoying and a little bit comical. I’m so happy I’m able to laugh at myself at times, even at times that might seemed oddly inappropriate to others!
A healthy sense of humor is a gift, y’all.
Anyhoo, it’s safe to say that the first two weeks school and our twice daily 30-mile round trip commute to school and back were a super duper, tremendous source of misery… for ME.
I did not feel like myself at all for basically entire month of August and sadly, I did not feel like writing or filming at all. I just want to prop my feet up and watch all the true crime and Little House on the Prairie reruns that I could until my foot healed, and I did! However, one month on from the toe incident, I’m feeling much more like myself and I’m ready to get back to regular old things.. and at my regular old rate of speed!!
Plus, these tasty recipes just aren’t going to share themselves, y’all. π
As a little side note, if y’all aren’t spending some time in Walnut Grove when you’re down, you really should be. ππ©π»βπΎ All seasons of Little House on the Prairie stream on the FreeVee TV app. Those old shows are one of my serious happy places, and a huge source of comfort for me. IYKYK π
We mostly just enjoy these cake mix brownie bites on their own, but a dusting of powdered sugar, or a little slather of milk chocolate icing over the tops are delicious ways to change these little babies up!

Cake Mix Brownie Bites

minutesThese easy Cake Mix Brownie Bites will be an instant hit with kids of all ages!! These petite, chocolaty treats are perfectly-sized for lunch boxes, but tasty enough to serve for a brunch or a holiday dessert buffet. Store any leftover mini-muffins in the refrigerator using an air tight container for up to one week.
Ingredients
1 (15.25 oz) box chocolate cake mix (we love Betty Crocker Triple Chocolate Fudge Mix for this recipe)
1/2 cup vegetable or canola oil
2 large eggs
Directions
- Lightly grease a mini-muffin tin (I use a 24-cavity mini-muffin tin) with non-stick cooking spray and set it aside. In a large bowl, combine cake mix, oil and eggs. Mix until a thick batter forms. Break down any large clumps of dry cake mix that are visible.
- Fill each cavity in the prepared baking sheet with one generous tablespoon of brownie dough. Bake for 10-12 minutes or until a toothpick inserted into the middle of the brownie bites comes out clean.
- Transfer to a rack and allow brownie bites to cool completely.

I haven’t used box cake mixture since probably I was just a kid (and I won’t lie, I’m a bit sceptical about box cakes). But indeed I’m surprised that something ultra beautiful and tasty may be created with a store-bought mix. Loving the exterior of these bites; they cracking surface looks just perfect to me!

Oh no it must be the season for breaking toes by walking into bed posts etc. Our friend did that last week! just before she flew out to Paris. These bites sound interesting and quick.
