Avocado toast is always a solid choice for a nutritious light meal at any time of the day. Basic avocado toast is made with a measure of ripe avocado that’s mashed and spread on dry toast. It’s typically seasoned lightly with salt and pepper.

I love avocado toast as an incredibly tasty, quick, and healthy meal option for extra busy days. It’s honestly satisfying and ready to serve in just minutes.

My favorite version of avocado involves just a bit more pizzazz.

I first shared about this recipe in a live stream on my YouTube channel 4 years ago, and it’s still one of my favorite easy meals; I make it very often.

I mix in a bit more spice with the mashed avocado, then top it with a delicious hard-boiled egg, a light sprinkle of finely chopped fresh onion, and a generous drizzle of sweet, sassy sriracha hot sauce. The egg adds a nice pop of protein to this recipe and gives this savory toast an inviting heartiness.

I most often prefer to make avocado toast on slices of Swedish-style knΓ€ckebrΓΆd or crispbread, such as WasabrΓΆd. It should be easy to find at your store, check for it where the crackers or the foreign foods are displayed.

Any good toasting bread will do for this recipe, but the delightful crunch of knΓ€ckebrΓΆd really adds something to this combination, in my opinion.

It’s a little flavor party on toast.

Ingredients

  • 1 slice of European-style crisp bread (such as WasabrΓΆd) or one slice of whole grain bread, toasted, as you prefer

  • 1/2 of a small ripe avocado

  • pinch of salt

  • pinch of ground black pepper

  • pinch of garlic powder, optional

  • pinch of onion powder, optional

  • 1 teaspoon lime juice, optional

  • 1 large hard-cooked egg, sliced

  • 1/2 teaspoon very finely chopped red onion

  • a generous drizzle of sriracha hot sauce, your favorite brand

Directions

  • In a small bowl, mash the avocado with a fork to a desired consistency. Season with the spices and lime juice (if using) and stir well to combine. Spread the mashed avocado mixture onto the toast.
  • Top the mashed avocado with the sliced, hard cooked egg. Drizzle with sriracha and sprinkle with chopped onions.
  • Enjoy!

Notes

  • I highly recommend pre-prepping the hard cooked eggs to make preparing this recipe truly quick and simple. Peel the cooked eggs and store them in an air tight container for up to one week. Then just slice and go!
