
Wrap sandwiches are one of my favorite warm-weather meals. They are generally simple to make and extremely versatile, although I honestly tend to lean toward no-cook fillings for wraps.
Not heating up my kitchen on wildly hot summer afternoons is a permanent goal (quite nearly a state of mind), especially during the month of August!
This easy wrap filled with smoked turkey, hummus and crisp, fresh veggies is one of my favorite summer lunches. I first shared this recipe on my YouTube channel in June of 2024, and it’s still in regular rotation in my house. It’s flavorful, light, and healthful. With all its vibrantly colored ingredients, it’s also very pretty on the plate.

Plus, this veggie-loaded sandwich recipe is a great way to use up some summer garden bounty. You know, if you have a bountiful garden… which I do not at the moment, but I’m thankful our local farmers do!
Last summer we planted and grew zucchini, cherry tomatoes, and jalapeΓ±os. That was an amazing experience, and we had a few good harvests. The zucchini plants really took off, and we honestly had more than we could eat. We happily gave some away to friends and family. We also got a little adventurous and planted sugar baby watermelons. Unfortunately, our resident garden pests took a few bites out of every single one that grew; we never collected any we could eat.
Maybe we will try to plant a few things next spring; it would be great to have homegrown food again and garden-fresh veggies to use in delicious wrap sandwiches like this one.
If you’re new to rolling up sandwiches, it will take a wee bit of practice to get the method just right. But, after a couple of tries, it really becomes much easier to do. Even if your wrap isn’t perfect, it will still be delicious!

The key to success with this wrap sandwich, and any wrap sandwich for that matter, is not to overstuff the tortilla. Wraps are commonly made with layers of ingredients and those layers will certainly add up to quite a stack of stuffing, so it’s best to keep them light. Be sure to slice and dice the veggies very thinly for best results.
