Cream scones are my very favorite scone recipe on the planet. They are the most deliciously simple baked treat, and I think they are the fluffiest, dreamiest scones you will ever eat! Classic cream scones are made with measures of whipping cream, flour, sugar and leavening; nothing else. Simple and so delicious!

This recipe for Sparkling Sweet Cream Scones is a slightly adapted version of the classic cream tea scone. I’ve added in a bit more sweetness and a hint of vanilla to the recipe. Vanilla extract is not a traditional ingredient for British cream scones, but I really think it adds a little extra panache to the iconic scones, and I prefer to mix it in.

A single whipping cream scone is served on a small white ceramic plate. The top is lightly browned,  toasted and bits of white sparkling sugar are visible on the lightly crackled top. This recipe for Sparkling Sweet Cream Scones is a slightly adapted version of the classic cream tea scone. I think these are the fluffiest, dreamiest scones you will ever eat! Simple and so delicious. This recipe yields 12 whipping cream scones and assumes two scones per person.

Ingredients

  • 3 cups 3 self-rising flour

  • 1/2 cup 1/2 sugar

  • 1 3/4 cups 1 3/4 cups heavy whipping cream or whipping cream

  • 2 teaspoons 2 pure vanilla extract

  • 2 tablespoons 2 flour (for kneading the dough)

  • 3 tablespoons 3 of extra whipping cream (for brushing the tops)

  • sparkling coarse sugar, for tops if desired

Directions

  • Preheat the oven to 425Β°. Line a baking sheet with parchment paper or a silicone baking mat and set it aside. In a large mixing bowl, combine 3 cups of flour and sugar, stir the ingredients, and set the bowl aside. In another medium-size bowl, combine whipping cream and vanilla extract; gently stir to mix.
  • Pour the vanilla whipping cream mixture over the dry ingredients, one half at a time, and use a wooden spoon to combine. Mix just until a thick, very shaggy dough forms. Turn the very shaggy dough out onto a generously floured surface and knead it gently just until all the flour is incorporated and it’s smooth.
  • Tear or cut the dough into two equal pieces and form both portions into 6-inch disks (3/4 inch thickness). Place the disks of dough on the prepared baking pan. Generously brush the tops of the dough with the reserved whipping cream. Sprinkle the tops with coarse sparkling sugar.
  • Use a bench knife (dough scraper) or pizza cutter to slice each disk of dough into 6 wedges; separate the wedges at least one inch apart from each other, as the scones will rise and spread while baking.
  • Bake the whipping cream scones for 13 minutes at 425Β°. At the 13-minute mark, change the oven temperature setting to broil (to lightly brown the tops). Bake scones under the broiler for 1 to 2 minutes (no longer than 2 minutes!), just long enough to lightly toast the tops. (Do not walk away from the oven while the scones are under the broiler. Watch them closely, as they can burn very quickly at that temp!)
  • Remove pan from the oven and allow scones to cool completely on a rack. Enjoy them on their own or with a smear of butter and your favorite jam.
