
If you’ve ever enjoyed a Denver omelette at your favorite old-school diner, then you already know why it’s a classic. The flavorful combination of fluffy eggs, smoky ham, sweet bell peppers, earthy green onions, and melty cheddar cheese is always something to look forward to.
Denver egg scrambles or omelettes have been items I’ve cooked up many times through the years for our big weekend breakfasts, but lately Denver Omelette Egg Muffins have been my go-to recipe when we’re craving those hearty flavors for our morning meal!

Baking up a delicious dozen of these Denver egg muffins is way better than slaving over a hot skillet some days, (most notably all the days between July and October!) and of course, I’ll always appreciate being able to call breakfast done for a couple of days.
Around here mornings can get pretty busy, especially once the school year starts up again. Between feeding all of my pets, dealing with a not-so-morning-person teenager, watering my plants, and trying to remember where I set my coffee cup down for the third time, having protein-packed breakfast waiting for us in the fridge can feel like winning the lottery.

Just slow down a minute, warm one or two cheesy egg muffins up in the microwave, pour a glass of orange juice or another cup of coffee (that hopefully you will keep track of!), and enjoy an effortless, tasty breakfast that will stick to your ribs, but not make a sink load of dishes.
Now, that’s just good planning, if you ask me…but by that time of the morning I probably can’t find my reading glasses. π€

These flavorful Denver omelette egg muffins are so simple to make, and amazingly convenient as a savory grab and go breakfast option. They’re also a great choice for lunch boxes, protein-packed afternoon snacks, or even a light dinner when paired up with fresh fruit and crisp green salad.
