Why is Southern Chocolate Cobbler the best chocolate dessert in the world? Because it’s not just a basic chocolate dessert, y’all — it’s an attitude.

Most desserts sit politely in their respective dishes and simply wait to be acknowleged; Southern Chocolate Cobbler shows up to the dessert table with a gooey, bubbly chocolate lava layer and snaps its (obviously imaginary) fingers and exclaims, “Cancel your plans people, we’re doing this now!”

The crackled top of a fresh baked chocolate cobbler, also known as an old-fashioned chocolate pudding cake. Hot fudge sauce is pooled all around the cake in the clear glass baking dish and craters of hot chocolate sauce are pooled in the nooks and crannies of the brownie-like chocolate cake.

This fantastical chocolate cobbler is what happens when a molten lava cake, a brownie, and a hot fudge sundae meet up and decide to form a dream team. It’s chocolatety, warm, self-saucing and it will effectively make every other dessert in the neighborhood look likes it’s not even trying.

The brownie-like top bakes up irresistibly fudgy and tender, and the bottom layer magically transforms into a rich, pudding-like hot fudge sauce as it does.

Let’s talk about the self-saucing magic for just a second. Simply follow the incredibly simple recipe, and then add hot water. It will sound a bit crazy, and you may re-read that line of instruction a time or two, but just trust the process!

I’ve made a full-tutorial video for this recipe as well, so if you have serious doubts about this recipe, it will help you through. But, I do hope you will give it a try.

This is one attention-grabbing chocolate dessert that brings everyone out to the table, spoons in hand; it’s a legendary family favorite treat at my house and lots of other houses too. I’ve not found the scientific study confirming it yet, but I’m pretty sure scratch-made chocolate cobbler is responsible for over 85% of all joy that exists in the modern South.

Just a word of warning, adding a scoop of vanilla or cinnamon ice cream to your serving of warm chocolate cobbler could be a life-changing experience. But don’t start making all your life decisions around this chocolate dessert, because it will never stick around enough to commit to anything.

Ingredients

  • for the cake
  • 1 1/2 cups sugar

  • 2 cups self-rising flour

  • 1/4 cup unsweetened cocoa powder

  • 1 cup milk (I used 2% milk)

  • 2 teaspoons pure vanilla extract

  • 1/2 cup (1 stick) salted butter

  • for the topping
  • 1/2 cup unsweetened cocoa powder

  • 2 cups sugar

  • 3 cups boiling water

  • optional toppings/garnishes
  • whipped cream or whipped topping

  • vanilla, chocolate or cinnamon ice cream

  • sifted cocoa powder for dusting the tops

Directions

  • Preheat the oven to 350Β°. Prepare the cake batter. In a large mixing bowl, combine the sugar, flour, cocoa powder. Run a whisk through the dry ingredients to sift the ingredients and break up any lumps of flour or cocoa. Make a well in the center of the dry ingredients then pour in the milk and vanilla extract. Stir with a wooden spoon just until a thick batter forms and set the bowl aside.
  • For the topping, in another medium-sized bowl, combine the cocoa powder and sugar. Mix well with a wooden spoon and also run a whisk through the mixture to break up any lumps of cocoa. Set the bowl aside.
  • Place the stick of butter into a 13×9 inch baking dish and then place the baking dish into the preheated oven. Allow butter to completely melt (see notes below) and then transfer the hot baking dish to a rack.
  • As well as you can, evenly spoon (see notes below) the prepared cake batter over the hot, melted butter but do not stir. Even sprinkle the dry ingredients for the topping over the the top of the batter and melted butter.
  • Carefully pour all of the boiling hot water over the top of the cake batter and topping mixture, but do not stir. Place the baking dish back into the heated oven, bake the chocolate cobbler for 35-40 minutes or until the top of the cake has set.
  • Allow the cobbler to cool on a rack for 20 minutes before serving. Top with individual servings with whipped cream or ice cream, if desired, or enjoy a big, decadent slice all on it’s own. Enjoy!

Notes

  • I use an ice cream scooper to drop the cake batter into the hot butter.
  • A room temp stick of butter will melt in about 10 minutes; a cold stick of butter will melt in about 15 minutes. Watch it closely so that it does not burn!
