My favorite month of the year is finally here!

Not only is it my birthday month, but October is also a welcome guest as it ushers out the last of the long, hot days of summer. In my opinion, it’s the most vibrant month of the year, as it paints the world with spectacular shades of red, orange, and yellow. It’s still warm here in Texas, but it’s mercifully cooler than it was two weeks ago.

I’m greatly comforted by the cooler days and eagerly anticipating the days of cozy sweaters, pumpkin patches, and sipping warm drinks by a fire. As the days continue to shorten, October also brings a sense of reflection and magical anticipation for the upcoming holiday season.

I’ve created a busy calendar for myself this month, and it includes several new new posts and recipes to celebrate the season of autumn. I will do my best to rise to this self-created challenge!

Today I’m re-sharing a few previously published posts that feature some of my favorite fall recipes.

1. Creamy Southwestern Pumpkin Soup

This Creamy Southwestern Pumpkin Soup is packed with bold flavors: smoky spices, earthy pumpkin, and a jazzy little bit of heat. A bowl of this flavorful soup will definitely warm you up on a chilly night! This is not your mama’s pumpkin soup

Golden colored pumpkin soup is in a white ceramic bowl and artfully garnished with a dollop of sour cream, pepitas and fresh, green cilantro. A small cutting board with a sliced lime is next to the bowl.

2. Slow Cooker Apple Butter

A slow cooker is the ultimate, cook-friendly gadget for making anything that is best cooked low and slow for several hours and this recipe for apple butter is one of those recipes. Apple butter is made with a mixture of simple of ingredients through a very simple (but committal) process, and the fruits of this little bit of labor are a warm spice-lovers dream.

3. Old-Fashioned Skillet Goulash

This Old-Fashioned Skillet Goulash is simple, flavorful and always comforting. This likely is just like the goulash your granny used to make! I prefer to make this recipe in a large skillet as a one-pot meal, but if you double the recipe a Dutch oven will have room for a larger batch. Don’t forget the cornbread or butter bread sticks on the side!

American goulash is cooked in a skillet and and a rustic wooden spoon is ready to serve it. Stewed bits of tomato, tender ground meat, bits of cooked yellow onion, ana macaroni pastas are all visible in this skillet casserole.

4. Golden Apple Cider-Ginger Mocktail

This flavorful Apple Cider-Ginger Mocktail is a cool drink that the whole family can enjoy…and in cute stemware too! The cinnamon and sugar rim really makes this autumn-inspired mocktail a real treat.

A bright golden beverage is served with a cinnamon and sugar rim as well as an apple wedge for garnish. The drinks are festively served on a sparkling silver table runner with orange, red, and gold leaves.

5. Easy Apple Pie Cake

A slice of apple pie cake is on a white cake plate. The layers of crunchy crumb topping, buttery yellow cake and bits of apple pie filling are well-defined in this slice of cake. A fresh cup of coffee in a clear coffee mug rest just beside the plate.

    • Happy fall, Velva! Yes, it’s still 97° today, but the lows are in the 60’s. Worth staying up a little later for that lol Thank you! 🙂
