Hey there, everyone! Just checking in for a moment to wish you all a belated Merry Christmas! Sorry it’s a belated wish, but we were all so sick last week. Evan and I both were down and out with horrible sinus infections (thank you seasonal-cedar-pollen-nightmare!), my son had strep throat and my daughter was running an allergy-related, low-grade fever for two days. Yep, as a bunch we were just a hot mess for a few days!
After a full round of doctor visits, we are all better now and we had a relaxing, quiet Christmas at home. My father-in-law came out for a visit and our Christmas day menu was ham simply glazed with honey and cinnamon, our favorite recipe for scalloped potatoes, a pot of country-style green beans, mom’s corn bread dressing, homemade dinner rolls, cookies and a scratch-made pecan pie! It was simple, but a perfect holiday meal for us. And, of course, we had leftover ham… for days.
Currently, I’m in Fort Worth and the kids and I have been traveling a bit to visit with family and friends. We are heading home today, but I haven’t had a chance to get a new recipe posted since the Christmas holiday! So, I thought I could re-share some of my favorite, previously-posted recipes for using up left over ham, just in case you still have some lingering in your fridge too.
Not all of these recipes have ham in the ingredients list, but a cup or two of diced ham would make a great substitution or add-in to these dishes, in my opinion! Hope you find something to enjoy here on this short list and a new post will be up very soon!

there is ALWAYS so much leftover ham, and i'm glad–i tend to like the later meals with it than the first one! π

I'm so sorry your family was sick and hope everyone is feeling better now! I love ham in soups and casseroles but we rarely have left-over ham anymore as one of my daughters and grandsons are not fans. Oh well, I just buy what I need at the deli for soup or scalloped potatoes when my husband or I get a craving π
