Roasted Turkey and Cranberry Sliders

Well, hi there! I hope you all had the best Thanksgiving, and if a school schedule applies to you, I hope you enjoyed a nice, restful week off. I was ever so thankful to have a free week with my kids, but for our family it was definitely not restful.

Homemade is the best, but these are my favorite pre-packaged dinner rolls! 
We were traveling a bunch and on the first leg of our trip we went to visit friends and attend a Christmas party hosted by Evan’s employer in Fort Worth. After 2 nights in North Texas, we drove home, regrouped and then traveled south to see my family on the Texas coast. We were only home for 2 1/2 out of 7 days last week and it was an amazing and fun whirlwind of faces and places we love.

For the last couple of years, we’ve celebrated Thanksgiving at home as our daughter’s birthday falls just a few days after the holiday. It’s been best for us to stick around the house because we previously planned large birthday parties for her here (with lots of prep work to complete!) before we had guests.

However, this year we made the drive and had the best 3 day visit with my mom, one of my older sisters and a handful of my nieces and nephews. It felt good to be home for a spell and have coffee with my mom every morning!

During our brief layover at home, I roasted a small turkey I bought before we had our Thanksgiving plans set in stone. So, after a few days of turkey, dressing, and pie at my mom’s, we came home to a whole roasted bird of our own to use up. I was pretty Thanksgiving’ed out, so I decided to get a little creative with some some dinner rolls and some chopped turkey! 

I find that sometimes just changing the packaging or presentation helps when it comes to leftovers and boredom.

Like me, I’m sure you’ve seen time-lapsed videos in your social media feeds with the popular and easy slider sandwiches made with dinner rolls. I’ve seen so many bloggers do their own spins on a dinner roll slider that I don’t even know who to credit with doing it first, but I know that I immediately fell in love with the concept.

I’ve recently made my own versions of Sloppy Joe sliders, Philly Cheesesteak-style sliders, chicken fajita sliders and others and my kids thought they were super cool. Trust me, it won’t be the last time you see an easy slider recipe on this site.

It’s a wonderfully easy and satisfying dish for dinner or entertaining. 

I made these easy sliders using just a little bit of mayo, sharp cheddar, roasted turkey, cranberry sauce and some fresh baby greens. They were so good and kind of like a Thanksgiving-inspired spin on a Monte Cristo sandwich (which I love with raspberry jam!). These sandwiches were a big hit with Evan and he really enjoyed them. But, my choice to put a healthy smear of cranberry sauce on them didn’t go over well with the kids, (no sirreeee Bob!) and they had some spaghetti for dinner instead.

Can’t please everyone all the time, ya know.

You may have noticed the gap in prep steps within the series of pictures I used in this post. Yes, there are no pictures in between the smearing of the mayo and the time they come come out of the oven all toasty. Well, I tried to make a brief video (and I actually spoke!) as I layered the ingredients and let’s just say it didn’t go my way.

In other words, I’m a crappy camera person.

Yep, I only had half of a face for the entire presentation! Bad. Live and learn, as they say, and I will try a video presentation again with another dish soon. 🙂

But, believe me, it’s easy enough to layer these ingredients and enjoy some delicious sliders of your own. I just know you will love these cute, little sandwiches too!

Roasted Turkey and Cranberry Sliders                         printable recipe

Ingredients:

  • 1 package of 12 sweet Haiwaiian-style dinner rolls. (I used King’s Hawaiian)
  • 1/4 cup of your favorite mayo
  • 1-1/4 cup sharp cheddar cheese, shredded
  • 1-1/4 cup roasted turkey, cubed or shredded
  • 1/3 cup cranberry sauce
  • 1-1/4 cup fresh baby greens, coarsely torn (I used a bag of baby kale and baby spinach)
  • 2 tablespoons melted salted butter
Instructions:
1. Pre-heat the oven to 400°. Place the dinner rolls on a large cookie sheet and slice the complete set of dinner rolls in half with a sharp knife
2. Lightly smear both halves of the rolls with mayo. Layer the bottom half with cheese, turkey, and cranberry sauce. Top evenly with torn greens.
3. Place the top half of the rolls onto the bottom half and using a basting brush, top each rolls with melted butter. 
4. Place sliders into pre-heated oven and allow to bake for about 10-15 minutes or until the tops are lightly browned and the cheese is melted. 
5. Enjoy!

  1. i LOVE those rolls. they're pretty much my permanent excuse for not making dinner rolls from scratch because they would never be as good as those! great idea for leftovers–i'd eat…several. 🙂

  2. This is a great idea! I have seen many of the spin videos but I have not seen it for this idea. Love it. An extra bonus is my family really enjoys the sweet Hawaiian rolls. No doubt this time of year can be crazy busy but so enjoyable.

David, I'm on FB a lot and my friends love the Tasty, Get in My Belly and other video bloggers and share their stuff often (or maybe I should say vloggers?)They all focus on quick-moving, time-lapsed videos and they've both featured these types of dinner roll sliders. There are lots of these sorts of sliders on Pinterest too. 🙂 We love them.

  14. I've never actually seen general sold like that, but it's a great idea! And, I don't know where I've been, but I haven't seen a single video on this subject. Clueless? Probably, but I imagine it's a product of my age… 🙂
