Chewy Oatmeal-Chocolate Chip Cookies

Chocolate chips are all the rage at my house at the moment. My kids ask for them in everything I bake and they’ll just eat them by the handful for dessert!  These big, chocolate chip skillet cookies are a favorite for dessert lately and we’ve made some other chocolate chip-filled goodies recently too. Needless to say, mini-semi-sweet chips have become a staple on the grocery list.

Well, I’ve tried to make this chocolate chip-love trend work to my advantage as a distraction while I sneak in fruit, veggies and a few other good things into my baked desserts, y’all. My son has expanded his palate a bunch in the last two years. He’s eating more veggies than he used to, but we’re still working on his (lack of) interest in fresh fruit. He loves apples, but everything every other fruit on planet Earth is still iffy with him (even watermelon is iffy with him! I know, it’s just shocking.)  My daughter, on the other hand, is a super tough customer and “hates all fruit”, but loves apple sauce (no one tell her how that works yet, please!).

However, adding a portion of chocolate chips into certain recipes has  worked as a small distraction and it’s helped me infiltrate the kid’s diet with a few extra good things lately. We made a loaf this rich, flavorful banana bread with chocolate chips recently, and both kids gobbled it up. The word ‘banana’ didn’t shut down the bread’s chances completely because it was paired up with the mesmerizing ooey, gooey, chocolate chips!

I’ve also been trying my best to get some more oats into my daughter’s diet as I’m a firm believer in the health and digestion benefits of oats. My son adores a bowl of oatmeal for breakfast, but again my girl won’t touch it. She doesn’t like the texture of oatmeal, and in her very own words “it’s too slimy”. She’s a stickler on this one and no matter the tempting toppings I add in, she won’t even try one tiny bite of it!

These chewy oatmeal-chocolate chip cookies were just the ticket for getting some oats in her belly, however. She was happy as a clam while dipping a couple of these in an icy cold glass of milk for dessert. Once I told her that she had just eaten oatmeal-chocolate chip cookies, she was in disbelief, but she then agreed oats weren’t so bad after all.

I also made a batch of homemade granola with oats, peanut butter, honey, and sliced almonds this past weekend which was a big hit with both kids too. The rolled oats were much more recognizable to her in the granola and she still ate it! This made me so hopeful that her stubbornness will continue to break down and she’ll enjoy more healthy, whole foods because she likes them for what they really are. Now, I don’t want anyone to take this post the wrong way and I’m not at all saying that these cookies are “health” food just because they have oats in them. They are definitely sweet treats that are also made with good portions of brown sugar, butter, flour and chocolate to boot. But for my picky eaters, sneaking in some veggies, fruit and other healthful ingredients into sweet baked goods has been a successful way for me to open doors for them to sample (or get reacquainted) with certain foods they actively avoid. It’s been a  strategy I’m comfortable with to get my kids past some pretty impressive, diet-related willfulness without a big fight.

Anyhoo, these cookies are just really tasty treats (with or without ulterior motives!) and we sure hope you all enjoy them too.

Chewy Oatmeal-Chocolate Chip Cookies            printable recipe

  • 2 cups old-fashioned rolled oats (I used Quaker brand oats)
  • 1-1/2 cups all purpose flour
  • 1 tsp baking powder
  • 1-1/4 cups packed light brown sugar
  • 1 cup (2 sticks) salted butter, room temperature
  • 1-1/2 teaspoons pure vanilla extract
  • 1 egg, slightly beaten
  • 1 cup semi-sweet, mini-chocolate chips
  • 3/4 cup coarsely chopped nuts, optional (pecans are good in everything, y’all!)
1. Pre-heat the oven to 350° and line a cookie sheet with parchment paper and set it aside. Mix the oats, flour, baking soda together in small mixing bowl and set aside. In a large bowl, mix butter and sugar together with a wooden spoon or handheld mixer until creamy. Add in the vanilla and egg, mix well.
2. Add the flour and oat mixture to the butter mixture, one half at a time. Fold in the chocolate chips and nuts, if you use them.
3. Drop heaping, rounded teaspoonfuls of cookie dough onto prepared baking sheet. Bake for 10-15 minutes or until cookies are golden brown and appear done. Allow cookies to cool slightly on baking sheet and remove with spatula to cooling rack.
4. Enjoy with coffee, tea or milk!
